The pizza flour is approved by the ‘True Neapolitan Pizza’ association (Vera Pizza Napoletana). The flour has been especially designed to make elastic pizza dough, that allows water to absorb well while kneaded.
This incredible flour has an 11% protein content (11g protein per 100g flour) to help produce elastic gluten structure during the fermentation.
